This dish might look very normal but I would still like to share it with you.

A can of sardines in tomato sauce is usually useful when you have other meat left over in your fridge. I always have it in the cupboard along with packets of vermicelli noodle.

Grilled lemongrass chicken ไก่ย่างตะไคร้

 

It’s been a while since my last post on this blog. However I still do a lot of cooking and keep posting my food on another social network. Writing the blog in English involves a bit of time for me as many of you know I’m from non English speaking background, and I want to make sure it all make sense for you.

Also many times when I cook I don’t really measure it, that’s why it is hard to write down the recipe to show you.
A few days ago I went to my friends house and met some of her extended family and friends. They all know about my blog and kept asking when I am going to upload a new recipe. I remember when I was young my family never bought bananas. We grew our own bananas in the farm. This was a wonderful decision, as we could use every part of the banana. Uses included the banana leaf for wrapping food, along with eating both the banana flower and the heart of the banana tree. I grew up with so many different ways of eating bananas, and below is just one of them.

My Christmas cooking experience

Over the Christmas long holiday I visited my parents in-law. They live in a country town in the middle of New South Wales. My mother in-law kindly let me use her kitchen, and I happily cooked for them. Cooking outside my kitchen is always a bit challenging for me, particularly cooking at my in-laws home which has limited Asian ingredients. Here are some foods I created for them during this holiday time.

Having brought along some Asian ingredients, the first dish I cooked for them was stir fried chicken with chilli jam. Using an easy method I just fried some onion with oil then added chilli jam and stir fried until fragrant. I then added the chicken and seasoning with fish sauce and oyster sauce. At the end I added spring onion and turned the heat off. I garnished with spring onion and sliced chilli before serving along with jasmine rice.

Seasoned prawns

I love having my blog. It is just like my online recipe collection. It is quicker to look for the recipe online than find the page in a cooking book. So all the recipes here are the ones I use a lot. Not only do I want to keep them, but they are the ones I want to share.

Seasoned prawns is a very simple and quick dish that delivers a succulent taste. I have made this dish many times trying different types of prawns, and It always comes out well. This time I also made a short VDO showing one way to make the dish.

Stir-fry eggplant with pork mince ผัดมะเขือม่วง

In Thailand we use the long green eggplant to cook this dish but here in Australia the long green eggplant is only available in Asian grocery shops and the cost is quite high. I substitute it with purple eggplant which in any supermarket or fresh food market. The price is lower and the taste is just as good as the authentic one.

Ingredients

  • 1 medium size eggplant.
  • ~150g pork minced
  • 1/2 cup Thai basil leaf
  • 2 clove of garlic
  • 4 red chilli (more or less as desired)
  • 1/2 cup of vegetable oil

Sauce mix

• 2 tbsp oyster sauce
• 1 tbsp soy sauce
• 1 tbsp sugar
• 1 tbsp salted soybean
