Thai Coconut jelly (วุ้นกะทิ)

I do not normally make dessert but this one is so easy and I really want you to try Thai Coconut jelly (วุ้นกะทิ)


Ingredients

1.5 tbsp agar agar powder

2 cup coconut water or water

1 Pandan leave

1 cup young coconut meat, diced (I used a can)

1/2-3/4 cup sugar

1 can coconut cream (525ml) I used Aroy-D brand

1/2 tsp salt

Method

1. Add 2 cup of coconut water (or just water if you can’t find coconut water) in a sauce pan. Sprinkle agar agar powder and leave for 5 mins.

2. Set the sauce pan on medium heat then add a knot of pandan leaf.

When it starts to boil add diced young coconut meat, sugar and salt.

3. When the sugar is dissolved add coconut cream. Gently heat (not boil) for another 2 mins. Turn the heat off then leave it to cool down a bit. Transfer the liquid to your desired mould. When it cools down put it in the fridge until set. Best served chilled.
