Sago Pudding

Sago pudding and young coconut meat, an easy to make Thai dessert that tastes delicious. Served in a coconut shell the dish evokes memories of tropical island holidays.

I’m not a big fan of dessert for either eating it or making it, but sago pudding is so simple to make. You really can’t go wrong with it.

Ingredients (serves 4)

100 g Sago

2 cups of water

100 -150 g sugar

1 cup young coconut meat

3/4 cup coconut milk

1 tsp salt

1/2 tbsp rice flour

1/4 cup water

Method

1. Rinse the sago well

2. Bring the water to boil then add sago. The sago is ready when it is translucent with a little white dot in the centre. When you see this dot you can add sugar.

3. Make coconut toppings by adding coconut cream, salt and rice flour (dissolved with water).
