Sweet ‘n’ spicy Sriracha wings

I haven’t posted anything on my blog for a while. My excuse is that I was so busy at work, however I never stop cooking I just don’t have time to write my blog, that’s all. I also post a lot of photos on Instagram. The good thing about Instagram is that by writing a short description and quickly posting the photo I know straight away who likes my food. The recipe I would like to share this time is “Sweet ‘n’ spicy Sriracha wings”, with the recipe from taste.com.au magazine and using Marian Gasby’s recipe.
Sriracha sauce is a spicy chilli sauce from Thailand that is now in use around the world. Thai people use it as a dipping sauce. I remember eating it with chips. You will see Sriracha sauce in many Vietnamese restaurants as a condiments for rare beef noodle soup (Pho). Do you know Sriracha is a district in Chonburi (about 1 hr. drive from Bangkok)? This is where the factory is located. Let’s have a look at the recipe.

Ingredients

• 1.5 kg chicken wings cut in half at the joint.
• 2 garlic cloves, finely grated
• 1 tbsp finely grated fresh ginger
• 60 ml (1/4 cup) light soy sauce
• 1 tbs vegetables oil

Prawn spring rolls กุ้งห่มผ้า

This is probably the easiest Thai entrée’ I have ever made. It was really fun to make and also looks elegant and tasty.

I really encourage you to try to make it in your kitchen.

Ingredients

  • Prawns, peeled and deveined . Gently cut them open to ensure the seasoning is placed inside. Each prawn makes 1 spring roll, so use as many you like.
  • Spring roll wraps. I use a larger size (250mm). Cut diagonally twice to get 4 triangle sheets from 1 big sheet

Prawns Pad Thai ผัดไทยกุ้งสด

Talking about Thai food, most foreigners might think of Pad Thai, Pad Thai is famous all around the world and it is popular among Thais too. Pad Thai is also a perfect vegetarian dish, just omit meat and substitute soy sauce for fish sauce. Here is Charinya’s version of Pad Thai

Simple Pad Thai sauce ซอสผัดไทย

When talking about Thai food with foreigners most of them consider Pad Thai as their favourite. One friend always asks me when I will show her how to make it. Today I will introduce my simple sauce that I always have at home. The sauce I am going to show you is not only used for Pad Thai, as this sauce base can create many different dishes.

Basic Sauce

Ingredients
• 1/3 cup fish sauce, to taste
• 1/2 cup tamarind pulp concentrate , to taste
• 3/4 cup palm sugar, to taste
• 1/2 tsp salt
• 1/4 cup water

Fried rice with chilli shrimp paste ข้าวผัดน้ำพริกกะปิ

Shrimp paste is a common ingredient in Southeast Asia. For Thai cuisine we use it as an ingredient in chilli paste, and to make a chilli sauce called “Namh Prik Ka-Pi”. Today I will present you with a different dish named “Kow Pad Namh Prik Ka-Pi ข้าวผัดน้ำพริกกะปิ” which is fried rice with chilli shrimp paste. I think it similar to the Malaysian nasi goreng.

Pad Mee

The popular Thai menu that is known around the world is called Pad Thai. Most of you will probably know it, by eating it or maybe even cooking it. Pad Mee is slightly different. The term “Pad” in Thai language means stir-fry. “Mee” is a a very thin, round noodle. Many people including me like to pair this dish with Som Tum (Papaya Salad). I thank you to my friend P’ Soraya who has shared this recipe to me. As she came from Southern Thailand this dish will be called “Pad Mee – southern style”.
